I definitely have a sweet tooth. That's not the greatest thing to have on a keto diet, but everyone has a weakness I suppose. I don't really miss bread or potatoes, but cookies and cakes indeed. I did find swerve though. It is a miracle. I love it, and it has been both a hero and a villain to me. I made these lemon bars yesterday with the last of my powdered swerve. In the first batch I made a couple of wees ago I used granular, and they did turn out better. These are still pretty good. I had 3 this morning for breakfast. At 103 calories and 2.5 carbs, I didn't feel too bad. That's 309 calories and 7.5 carbs total. I tweaked the recipe found here.
Lemon Bars
Ingredients
CRUST
3/4 cup blanched almond flour
1/4 cup coconut flour
1/2 cup coconut oil or butter
1/2 cup Swerve
1/2 tsp sea salt
FILLING
3 large eggs
1/2 cup Swerve
1/2 tsp baking powder
1/4 tsp sea salt
1/4 cup lemon juice - about the juice of 1 lemon + a little from concentrate if necessary

CRUST: Preheat oven to 325 degrees F. Grease a 8 x 8 square glass pan. In a medium bowl, mix ingredients. This will be a thick cookie crust; press onto bottom of pan. Place in oven to pre-bake the crust. Bake for 20 minutes or until lightly golden brown. Remove from oven and set aside to cool.
FILLING: In a medium bowl, beat the ingredients for the filling until well combined. Pour the mixture evenly over the pre-baked crust and bake again for about 30-40 minutes or until set. Let cool. Store in fridge or freezer in an airtight container. Makes about 16 bars.

Ribs
For lunch I ate some ribs that my husband grilled last night. He only added salt and pepper. I'm not completely sure about the calories, but I'm going with 304 per 4 oz. I had about 8 oz. 0 carbs, and that is the important part since I'm still not back into ketosis yet. So far I've had 917 calories or so and 7.5 carbs total. Hopefully I can make it until dinner without needing any carbs or calories for that matter.
Well I didn't make it until dinner. I ate 3 more lemon bars. Still low carb, so I'm not going to stress too much. I'm at 1227 calories and 15 carbs. I might try to stop for the day. I need to remember to drink more water too. I also ate 2 almonds. I'm trying to be completely honest with what I eat, so I wanted to go ahead and add them even though they are tiny.
