It's been quite awhile since I've posted. A cheat weekend turned into a couple of weeks. Whoops. Well now that I've gained about 10 pounds I'm determined to eat healthier again. I made two dishes this week that, I am happy to say, went very well. I tried turning spaghetti squash into angel hair pasta. It definitely turned into delicious pasta. Then tonight I roasted a whole chicken, and it turned out beautifully.
Spaghetti Squash
Ingredients:
Directions:
- 1 Spaghetti Squash
- Olive oil
- Salt and Pepper
Directions:
- Preheat oven to 375F
- Cut squash in half and scoop out the seeds
- Drizzle with olive oil and sprinkle with S&P
- Place cut side down on baking sheet
- Roast for 30-40 minutes
- It is done when a fork can be pierced all the way through
- Rake with a fork horizontally to get the noodles out
- Toss with pasta sauce
The squash turned out great. The texture was nice, and it was incredibly easy to make. It has more carbs than zucchini noodles though. We will probably keep zucchini as a weekly meal. I made hash-browns with the leftovers and they were surprisingly good.
Roasted Chicken
Ingredients:
Directions:
- 1 Whole chicken
- 4 small onions
- 4 medium carrots
- Olive oil
- 2 T butter
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp dried rosemary
- 1 Head of garlic
- 1 Lemon
Directions:
- Preheat oven to 425
- Cut up carrots and toss with olive oil
- Cut onions into large slices
- Place slices in center of roasting pan
- Clean chicken and remove giblets
- Rinse and pat dry
- Put lemon and garlic inside chicken and tie legs together
- Make a butter compote with salt, pepper, and rosemary
- Put 2/3 of the butter between the skin and breast, spread the other 1/3 on top of the breast
- Place in the oven and cook for an hour and a half or until the thigh reads 170F
- Tent with foil for 10 minutes before slicing
The chicken was very juicy and flavorful. My husband made some broccoli to go with it, and it was absolutely divine. Hopefully I'll be posting more recipes this week. I haven't been staying on a keto diet. I've been eating more carbs. I'm still going to be cooking low carb meals for my husband, and still posting recipes here though.
