I didn't do any cooking or baking today. I went to my brother's wedding shower. It was catered by a Mexican restaurant. I didn't know the stats, but I think I kept it keto. Then when I got home I ate some pulled pork and peanut butter pie. I'll take pictures of the pork tomorrow and get my husband's recipe. I also wanted to try making a chocolate ganache I found. I tried it, and it was wonderful. I put it on top of the peanut butter pie. I didn't take any pictures because there was just too much going on when I got home. I'm not sure about calories or carbs for the day, but hopefully I didn't do too badly. I didn't eat the fried part of the chile relleno, but I did eat a lot of the cheese and pepper. It was so incredibly good.
Chocolate Ganache
Ingredients
1/2 oz unsweetened baking chocolate
1 Tbsp butter
1 Tbsp powdered Swerve
Directions
In a small sauce pan heat the chocolate and butter on low heat until smooth, then add the sugar. Wait 5-10 minutes and pour on desired dessert.
This recipe can be multiplied for an entire cake or pie. This amount covered about 1/4 of a pie.
