I am going full keto today! According to my keto strips I am definitely back in ketosis. Yesterday it was questionable, but I'm back in the club now. It took 4 full days to get back after my crazy weekend. I am not going to cheat again until the wedding. This blog is helping to keep me honest, and it makes me want to keep the calories and carbs down. To celebrate my shift back into ketosis I made the most keto breakfast there is, bacon and eggs.
Bacon Weave
I used 3 pieces of bacon for each weave. I put them into a cold oven turned it to 400F and it took them 22 minutes to get to where I wanted them. I only had one egg over easy. I'm looking at 300 calories and 0 carbs for this breakfast.
Cheesecake Strawberries
I saw these beautiful strawberries on sale, and i just couldn't help myself. It was 2 pounds though, so I need to eat them in a hurry. I found a great way to enjoy them. I saw this recipe the other day, and I really wanted to try it. I only wanted a few strawberries, so I scaled it down. I found that it filled a lot more strawberries than planned. The scaled down recipe was plenty for 8 berries.
Ingredients
10 hulled strawberries
2 oz cream cheese, softened
1 TBSP granulated Swerve
1/4 tsp vanilla extract
CRUMB TOPPING:
1 tsp Almond Meal
1/4 tsp Swerve
1/8 tsp ground cinnamon
Directions
With a mixer, blend the cream cheese, Swerve and vanilla. Spoon into a sandwich bag and put in the fridge to cool (optional, but cheesecake tastes better cold). Meanwhile, wash and cut the tops off the strawberries. With a paring knife, hollow out each strawberry. Take cream cheese mixture out of fridge and cut one bottom corner off of sandwich bag. Pipe cream cheese mixture into the hulled strawberries, squeezing out from bag through cut corner. In a separate bowl, stir all of the crumb topping ingredients together. Sprinkle mixture over each strawberry. Serve immediately. Can be refrigerated if not serving immediately.

Well I caved and ate more pie, but I've still got about 400 calories that i need to pack with protein This will be the longest trip I've ever spent away from my older son. It will be over 48 hours. I think he'll have fun with his dad though. My husband will have a smoked pork shoulder when I get home. He's smoking it all day Saturday.
